Best Vindaloo sauce I've used

Marinated half a kilo of mutton in the sauce over night. Added chopped potato and onion. slow cooked for 8 hours. Perfect vindaloo, medium hotness with just a touch of the vinegar sharpness that marks the dish out. Will be a staple of my cupboard from now on.

4 large thighs, good to feed two people. Good flavour and skin crisped well.
