History
Legendary Sauvignon Blanc specialist Thys Louw and maverick winemaker Duncan Savage have gone to great lengths in the scenic vineyards to produce an extraordinary range of wines, a project in pursuit of vinous perfection. This elegant wine come from 5 to 30 year old combination of vines trellised on a vertical hedge system and older bush vines. Vine are supplemented with irrigation and harvest method of machine and hand picked in February/March time.
Regional Information
In the wonderful location of Swartland these vines grow in soil of decomposed granite and sand stone types. With climates of warm dry summer and wet winters, typical Mediterranean style weather

Vinification Details
Shiraz is harvested in the warm dry Swartland. The grapes are crushed and destemmed to stainless steel fermentation tanks. Fermentation is achieved through the addition of cultured yeast strains. Extraction is is achieved through aerated pump overs and a total of 2 weeks on the skins. Gentle pressing to tank where French Oak Staves are used during Malolactic fermentation to add to the complexity.
