Prosecco has been made in Italy for centuries with some saying it dates back to the 1700s. Until 1960s Prosecco was made in a much sweeter style, quite similar to Asti from the Piedmont region. Since then production techniques have improved leading to better quality, dry wines produced today. Prosecco is usually produced using the Charmat method, in which the secondary fermentation takes place in stainless steel tanks.
The landscape surrounding the winery is breath-taking with high terraced vineyards on steep slopes. Prosecco grapes have been tendered on theses hillsides for decades. The production zone includes fifteen villages and stretches over an area of around 20,000 hectares. Vines are grown only on the most sunny parts of the hills, at altitudes varying between 50 and 500 metres above sea level, while the north-facing slopes are covered mainly by woodland.
Sorso Prosecco is made based on the white wine-making process whereby the grapes are softly pressed to obtain the must, which is then chilled and filtered. Fermentation takes places in temperature-controlled stainless steel tanks between 18°C and 22°C. When fermentation finishes, stabilisation and sparkling wine-making process follow, where a second fermentation occurs using the Charmat method.
