For proper Italian pasta (and why would you want anything else?), add pasta to a large pan of slightly salted boiling water and cook for 8 mins until al dente. If you like your pasta a little softer, cook for 10 mins. Drain, smother in sauce and enjoy.

Ragu' Di Funghi a Spaghetti and Mushroom Aymphony
Prep 10 Mins

Serves 4 People
10g Dried Porcini Mushrooms
4-5 Tbsps Napolina Olive Oil
1 Onion, Finely Chopped
1 Carrot, Finely Chopped
1 Stick Celery, Finely Chopped
1 Clove of Garlic, Crushed
600g Mushrooms, Sliced
150ml Red Wine
1 Tbsp Napolina Tomato Puree
2 Tsp Fresh Thyme, Chopped
Pinch of Chilli Flakes
Salt & Pepper
400g Napolina Gluten Free Spaghetti
Fresh Thyme, to Serve
1 Pour over just enough boiling water to cover the porcini and leave to rehydrate for 30 minutes.
2 Heat half the oil in a heavy-based frying pan and soften the onion, carrot and celery. Add the garlic and cook for a minute more.
3 Turn up the heat, add the mushrooms* to the pan, drizzle with the remaining oil and cook until lightly browned. Then pour over the wine and bubble until reduced by half.
4 Drain the porcini, reserving the liquid. Chop roughly, then add to the pan with their liquid, the tomato puree, thyme, chilli and seasoning. Simmer gently for 15-20 minutes until the sauce has thickened.
5 While the sauce is simmering, cook the spaghetti until al dente. Drain, then stir in the sauce. Scatter with thyme.
*If you don't care for mushrooms, then we cannot be friends.

Cooking Guidelines
Boil - From Ambient. Add pasta to a large pan of slightly salted boiling water, return to the boil and cook for 8-10 minutes according to taste. A shorter cooking time will create a firmer authentic Italian texture ('al dente' meaning firm to the bite'). Drain and serve with your favourite Napolina pasta sauce.
