Roast Mediterranean Vegetable Couscous
Prep time: 15 minutes
Cooking time: 30 minutes
Serve: 4
Ingredients:
120g couscous
1 small red onion, diced
1 medium courgette, diced
1 large yellow pepper, deseeded and diced
1 small aubergine, diced
100g cherry tomatoes
1 tbsp olive oil
4 tbsp sundried tomato paste
Salt and black pepper
1 tbsp fresh basil, finely diced
Method:
1. Cook the couscous to the on pack instructions, then drain and set aside until required.
2. Pre-heat oven to 200°C/400°F/Gas Mark 6.
3. Add the red onion, courgette, pepper, aubergine, cherry tomatoes, oil and 2 tablespoons of the sundried tomato paste in a large bowl and season lightly. Mix until the vegetables are well coated in the oil and then spread out evenly in a roasting dish.
4. Roast in the centre of the pre-heated oven for 20 minutes.
5. Stir the roasted vegetables, basil and the remaining sundried tomato paste into the couscous and serve warm.
To Serve:
Great as an accompaniment to grilled lamb or vegetable kebabs.

No need to soak. Bring 150ml water or stock to the boil in a large saucepan on the medium hob ring over a high heat, add 100g of couscous. Stir, cover with a lid, reduce the heat to low and simmer for 5 minutes until most of the water has been absorbed. Remove from the heat, drain off any excess water and stand for 10 minutes. Separate the grains with a fork and use as required.

rainbow cous cous
I make this with boiling stock, just covering the cous cous, cover and leave until absorbed. Fluff it up the add chopped cucumber, red onin, Peppers, tomatoes,pomegranate seeds add a dash of red wine vinegar, and some mint. Lovely with feta cheese, or a side with salmon or steak.
Good quality cous cous
Tasty, quick and easy to prepare and saves a lot of money compared to the ready made ones.

We usually get the packet mix cous cous but gave this a whirl and it was lovely. Made my own stock and didn't make it up like the instructions said I just added boiled water and it was lovely. Simple to make and we fried some vegetables and added them to it. Glad it's online though, has when I looked last week I couldn't find it so had to buy it instore but I'd rather get online.

This is not gluten free!!
Why put cous cous in a gluten free recipe when it is made from wheat. I would recommend this to someone who is not gluten intolerant.
