Cooking Guidelines
Cooking Instructions - General. Cooking appliances vary. These instructions are given as a guide.; Hob - From Ambient. Break the chocolate into small pieces and place in a bowl. Place the bowl over a saucepan of hot (not boiling) water, taking care to ensure that the water does not enter the mixture. As the chocolate melts, stir until it is free flowing and ready for use.
Avoid over-heating and ensure that all utensils are dry.; Microwave - From Ambient. Break the chocolate into small pieces and place in a small non-metallic bowl. Heat on full power for 30 seconds (Cat D/750W) and stir. Repeat until the chocolate is completely melted, stirring thoroughly to mix well.

Cooking chocolate, really?
I bought this as the Morrisons 85% dark chocolate isn't available and no immediate substitute springs to mind - except this! Lovely smooth, very intense chocolaty taste which lingers seductively on the palate. Excellent surprise, why waste it on cooking? Buy cocoa powder for cooking, this for eating. Check the value too.

Smooth
Good texture, a tiny bitter aftertaste if you eat it plain, but it's to be expected with a 74% chocolate, and i'm sure it would be lovely in baking.
