Preparation and Usage
Just add:
2 medium eggs, 120ml of water, a little butter and a bit of elbow grease!
What you'll need:
2 medium eggs
120ml of water
A mixing bowl
2 x 18cm (7 inch) round cake tins or a tin cupcakes
A whisk (electric is best, but a hand whisk will do)
A little butter for greasing
Greaseproof paper or 12 cupcake cases
A wire cooling rack
Your favourite fillings and toppings
To make an amazing Chocolate Sponge Cake or tasty cupcakes:
Cooking appliances vary.
These instructions are given as a guide.
1. Pre-heat your oven to approximately 180°C/350°F/Gas Mark 4.
2. Grease with the butter and line the two round cake tins with the greaseproof paper (the butter will help the paper stick to the tin). Or, if you're making cupcakes, place 12 cases in a cupcake tin.
3. Empty the mix into your large bowl and add the eggs and water.
4. Mix with a hand mixer or electric whisk until the mixture is smooth.
5. Divide the mixture equally between the two cake tins or spoon it into the cupcake cases.
6. For the cakes, just pop them in the oven for 20-25 minutes or until risen and springy. If you're making cupcakes they'll only need 12-15 minutes.
7. When they're ready, take them out and leave them to cool down on your wire rack.
8. Sandwich cakes together with your favorite fillings or decorate your cupcakes with icing and sprinkles!
Top tip:
Always take your cakes out of the tin to cool; otherwise they'll carry on cooking and won't taste their best.

Works well in the microwave
For a really speedy pudding or chocolate hit, works well in the microwave - 2 minutes for half the mix with one egg. Very light and fluffy sponge
