Perfect for brilliant brown bread
You'll need:
500g strong brown flour
20g fresh yeast or
1 sachet dried yeast
320ml water
15ml olive oil
8g salt
Makes one large loaf
1. Dissolve yeast in warm water, add olive oil.
2. Mix the flour and salt together in a bowl, add the yeast and oil mixture to the flour, mixing as you go.
3. Get your hands in the bowl and bring all mixture together into a ball of dough.
4. Knead it for 10-15 minutes on a lightly floured surface until it's smooth and elastic.
5. Place it in a clean bowl and cover with a clean damp tea towel or cling film and leave it somewhere warm about 60 minutes.
6. Set your oven to 200°C, 400°F Gas Mark 6 and leave it to warm up.
7. Lightly mould the dough piece round and place onto a greased baking tray. Cover and allow to ferment for 30-45 minutes, until doubled in size.
8. Dust with flour and bake for 20-25 minutes, until your bread is golden.

Good strong flour
We make bread daily in a bread maker and use this flour Mon to Friday for great tasting brown loaves. At the weekend we use 25% Morrisons strong white flour to make it rise more as there are more mouths to feed. Morrisons should get the title changed to reflect its a Strong flour.
