History
Castellblanc is one of the oldest cava-producing wineries in the Penedés. It was founded as a small family business in 1908 by the Parera family. Castellblanc was one of the first companies to use their own selection of yeasts and apply the process of microfiltration prior to tirage to purify the fermentation in the bottle. The Castellblanc production process has since become a model for advanced stirring methods.

Vinification Details
After a controlled temperature fermentation at 12°C in stainless steel, the two grape varieties are blended. The wine is bottled and yeast is added to set off the second fermentation. The wine remains on its lees for a minimum maturation period of nine months before the sediment is disgorged and the wine is made ready for sale in the same bottle.

Delicious!
We really like this Cava. It's lovely and dry, but has a special taste to it! Would highly recommend if you enjoy a dry cava.
