Storage

Recipes
First prepare the savoury butter: Gently mix 60g crumbled blue cheese, 4 finely chopped Peppadew sweet pickled peppers, tablespoons grain mustard and 1 tablespoon chopped fresh sage, salt and freshly ground black pepper into 125g softened butter. Shape into a rough sausage and roll up tightly in cling film. Chill or freeze (for up to 3 months). When ready to serve, unwrap and slice.
Thickly slice the rested steaks and top with butter slices. Pop into oven for 30 seconds to start the butter melting or flash under the grill. Serve immediately with home-style thick-cut chips or potato wedges and balsamic glazed onions.

Cooking Guidelines
Season the steaks with salt & pepper and rub with a little oil.
Fry the steaks in a very hot, heavy based pan according to the following guidelines:
For Rare: 2 mintues, reduce heat to medium then turn and cook for a further 2 minutes. Cook for a further 2 minutes turning as necessary.
For Medium: 2 minutes, reduce heat to medium then turn and cook for a further 2 minutes. Cook for a further 5 minutes turning as necessary.
Remove from heat, transfer to a warm plate, cover loosely with foil and allow to rest for 10 minutes before serving.

inconsistent size
I bought two packs of venison one pack had two sizeable steaks in it the other had two small round sinewy steaks. My husband and I ended up having the very small ones as I didnt want to give them to our guests. Im guessing I paid the same price. I have these steaks regularly and have noticed the variation in size but never so obvious as the last ones. The larger ones looked beautiful and with no sinews on them. I will reluctantly have to stop buying them if this continues. What a pity that they vary so much
Too much hidden fat and sinew
Looks really nice but once out of the packet it's one of those where they fold the pieces to show the best side and all the rubbish is hidden. Once trimmed I lost about a third, but what was left was tender and OK.
Good value for money.
Very tender and easy to 'carve'. A good quantity for the money. Oven roast, but not too long. A dollop of cheap red wine con make a difference. (Mulled wine is good)

The worst venison I have ever tasted, in fact Im not convinced it was even venison, ended up binning it as even a sharp knife would not cut it

It’s nice, but we were plagued with the thought that we might be biting on shrapnel all the time. And secondly there was a lot of gristle.
