A classic martini is simply a mix of gin and dry vermouth. How Dry your martini is depends on how little vermouth you include.
The famous wit Noel Coward liked his martinis very dry indeed. His perfect dry martini method was to "fill a glass with gin and then wave it in the general direction of Italy" (where they make vermouth). Recipe - 5 parts gin, 1 part extra dry vermouth, twist of lemon zest.
The earliest written reference to a "Juniper based tonic" drink was way back in the 1260s, in a Dutch natural history manuscript -"der naturen bloeme".
Legend has it that the classic gin cocktail - The Gimlet, was invented by Surgeon Admiral Sir Thomas Gimlette, who is said to have first added lime cordial to the daily gin tot of the men of the Royal Navy, to help combat scurvy on long voyages. Recipe - 3 parts gin, 1 part lime cordial, twist of lime peel.
Juniper Berries are almost always harvested by hand because the plant is covered in sharp needles. The traditional method is still used which involves beating the plant with a stick and catching the berries in a basket placed below.
Back in the early 20th Century in Florence, Count Camillo Negroni thought his favourite cocktail (the Americano) needed a bit of a boost, so he asked his friend and local bartender Fosco Scarselli to replace the soda water with gin, and the drink proved so popular the locals soon started popping in to ask for a "Negroni".
Recipe - 1 part gin, 1 part rosso vermouth, 1 part Campari, twist of orange peel.
Once quinine was found to be a deterrent to mosquitos, which carried malaria, gin was added to the quinine tonic to make it taste better, and the gin & tonic was born.

Preparation and Usage
"Meet Me Under the Mistletoe" Cocktail Recipe
Put 4 cranberries into a tall glass with a slice of orange then slightly squash with a spoon and add ice. Add the gin from one of the miniatures (we recommend Hendrick's or Martin Miller's). Add a large dash of sugar syrup and then around 50ml of cranberry juice and 25ml of soda water. Stir well and garnish with a sprig of thyme.
"Let The Fizz-Tivities Be-Gin" Cocktail Recipe
Using a prosecco glass, add around half of the Edinburgh Christmas Gin you'll find in the calendar (Edinburgh Gin's Raspberry Liqueur, and Sipsmith Sloe Gin work very well too). Add the juice of half a lemon and a dash of sugar syrup, then stir. Finally, top the glass with your favourite fizz and enjoy.
"Blitzens Christmas Bramble" Cocktail Recipe
Mix the gin from one of the miniatures (tanqueray or Boodles work very well) with the same amount of cloudy apple juice, the juice of half a lemon and ice. Mix the ingredients together in a cocktail shaker (or use a large glass and put your hand over the top) then pour over crushed ice. Gently pour Creme De Mure over the cocktail and garnish with a stick of cinnamon and a wedge of apple.
