this is pure aata and result is soft chapati.

Made really hard rotis. Thinking of what to go with a large bag that no one in the house wants to be served with at all.
Healthy and tasty
I use this for my family's chapattis. It is the best for making really authentic homestyle rotis. I find that the dough handleability is improved by adding a pinch of salt to the flour before kneading in to a dough. I use just less than 1 cup of cold water to 2 cups of flour, mix briefly, leave covered for half an hour, then knead well for about 3 - 5 minutes, and that gives pretty much perfect dough. They were out of stock last time, so I'm using medium (pretty much refined white) flour right now, and neither the OH nor the kids are impressed. The wholemeal is far tastier, far more filling, and I feel better about feeding it to my family.
