Product Description
A stoneground flour milled from wholegrain buckwheat which is grown, stored or processed adjacent to wheat and other cereals. Traditionally used for pancakes and pasta.
In times gone by buckwheat, fagopyrum esculentum, has been called sarrasin and black wheat due to the black outher casing of the triangular seeds.
Buckwheat is a member of the rhubarb family which ripens in late autumn. It is a traditional food in Russia where it is known as kasha, as well as featuring in dishes from Northern China, Tibet and Europe. The flour has a calico colour and natural sweetness which can impart a pleasing flavour to noodles, pancakes, pasta and home baking.
Baking with Buckwheat Flour

We bought a millstone and set it up in the barn on our farm on the picturesque Wiltshire/Berkshire border. We now have a thriving business which mills may different and rare grains. At the heart of our ethos, we are dedicated to ethical production methods, slow food and the organic movement. On our farm we rotate crops, livestock and grassland, as well as respecting the biodiversity of wildlife and the local environment.
We are also passionate about home baking and believe that what we eat today will affect our healthy and well-being tomorrow. Machine Buckwheat Bread
Follow your usual bread machine recipe replacing a quarter to a half of the strong bread flour with buckwheat flour.
Blini
These traditional small drop scones are often served as canapés with sour cream and other toppings. Larger blini are delicious served with fruit purée or chocolate sauce.
2 Eggs
175g Buckwheat flour
2tsp Baking powder
300ml Milk
2tbsp Oil
1. Whisk the eggs until frothy.
2. Mix in flour, baking powder and milk.
3. Beat well to make a smooth batter.
4. Heat a little oil in a heavy frying pan and drop in tablespoons of batter.
5. Cook until the underside is golden then turn over and cook the other side.
6. Repeat with remaining batter.
Fruity Prune Loaf
Oven 180°C/Fan 160°C/350°F/Gas 4
100g Prunes
1 Orange
3tbsp Oil
1 Egg
50g Yogurt
50g Honey
100g Buckwheat flour
1tsp Bicarbonate of soda
1tbsp Demerara sugar
1. Chop the prunes into a bowl.
2. Add the grated orange rind and orange juice.
3. In another bowl beat together the oil, egg, yogurt and honey.
4. Sieve the flour and bicarbonate of soda into the bowl and mix well.
5. Stir in the prune mixture.
6. Tip into an oiled and lined 500g/1lb loaf tin.
7. Sprinkle the Demerara sugar over the top.
8. Bake in a pre-heated oven for 35/40 minutes.
Blackberry Muffins
Oven 200°C/Fan 180°C/400°F/Gas 6
100g Buckwheat flour
100g Caster sugar
2tsp Baking powder
50ml Oil
1 Egg
50ml Milk
1tsp Vanilla extract
150g Blackberries
1tbsp Demerara sugar
Muffin cases
1. Mix together the flour, caster sugar and baking powder.
2. Add the oil, egg, milk and vanilla and beat well.
3. Stir in the blackberries.
4. Spoon into paper muffin cases standing on a baking tray.
5. Sprinkle a little Demerara sugar over each muffin.
6. Bake in a pre-heated oven for 30/35 minutes.

Good Replacement for Wheat Flour
I've been using this flour in a lot of the cooking I do and to make some wheat-free crackers. It doesn't have a strong flavor and I find it the easiest wheat-free flour to adapt to different recipes. The packaging was a little bit flimsy, but in a storage jar in the fridge, my previous bag lasted for 3 months.
