400g Chicken breast, sliced
200ml Blue dragon coconut milk
A handful of mangetout or green beans
A handful of mushrooms, sliced
Blue dragon fish sauce and palm or caster sugar to taste

Heat: Get your pan hot, then add a splash of vegetable oil.
Sizzle: Fry your meat until cooked through, reduce heat to medium, add your paste and gently cook for a minute to release the flavours & aromas.
Stir: Add the coconut milk and bring up to the boil. Add the vegetables, then simmer for about 10 minutes until all infused with the flavours and cooked through.
Enjoy: Serve with steamed rice.

superb
Cant comment on authenticity however after trying just about every other make of curry paste this has proven to be our favourite. Full of flavour and gives a lovely creamy texture to the sauce.

Lovely curry dont know why people worry about big tubs of paste they freeze very well & Ive done it for years!!
no fish sauce in it
this is great for me as a vegetarian as it has no fish sauce in which so many curry paste do. it's pricy but actually less wasteful in some ways as often a jar will go out of date before you use it all anyway. it's medium spicy g would say we eat it with one tin of coconut milk between two of us and a pack of stir fry veg and tofu
