To make the couscous, simply pour it into a bowl and stir through some boiling water. Cover and leave it for 5 minutes then drizzle over some olive oil and fluff it up with a fork. For an extra lift, stir through a squeeze of lemon juice.

Slice the top off 4 red peppers, remove seeds and microwave for 5 mins.
Scoop the prepared couscous into the peppers. Finish with a scattering of sliced green olives and some crumbled goats cheese. Replace tops.
Roast on a baking tray at 180°C for 10 mins.

Moroccan Spiced Couscous
1 Add 300ml of boiling water to the couscous in a bowl. Cover and leave to stand for 5 mins.
2 Drizzle with a little olive oil separating the grains with a fork.
3 Serve cool tossed through a salad or warm alongside our Al'Fez smoky harissa tagine.
Tip: For a zesty lift, add a squeeze of lemon juice.
