Ingredients

  • 30 g of butter
  • 6 medium of vine tomatoes, sliced
  • 1 bunch of radishes
  • 6 tablespoons of piccalilli
  • 1 whole of lettuce, torn
  • 8 slices of mature cheddar
  • 1 large of wholemeal loaf
  • 400 g of cooked ham, sliced

Method

  1. Step 1

Slice the top off the loaf. Pull out the soft bread from the centre, so you are left with a hollow shell.
  2. Step 2

You could blitz the soft bread into crumbs and pop them in the freezer for use in another recipe later.
  3. Step 3

Brush melted butter over the base and sides of the hollow loaf.
  4. Step 4

Slice the cheese then layer the filling ingredients inside the loaf, using half of each, then the remaining to create two layers and pack down. Finally, spread some piccalilli onto the cut side of the top of the loaf.
  5. Step 5

Replace the lid of the loaf, wrap the whole thing in clingfilm then foil or parchment, ready to take on your picnic. Don’t forget to take a bread knife to slice it up.
