Kingston Estate Wines

The grapes were harvested at night in the cooler temperatures to capture the intense flavours and to minimize fruit oxidation. Following crushing, the juice was chilled, pressed and clarified. Each parcel of juice was inoculated with cultured yeast to start fermentation. The ferment for 16 days was controlled at a relatively cool temperature (14-16 0C) to minimise loss of varietal flavours. Finally, the wine was blended to style and clarified prior to bottling.
