Sugar Inspiration: No. 4
Fondant Icing
45ml water
250g fondant icing sugar
Sift the fondant icing sugar into a bowl, and gradually stir in the water until the icing becomes a smooth paste.
Add more water (one drop at a time) or more fondant icing sugar to adjust the consistency as needed.
This makes enough to cover a 7 inch cake or 12 cupcakes. Fondant icing is also great for bakewell tarts and sponges.

Modelling Icing
500g fondant icing sugar
30ml water
Sift the fondant icing sugar into a bowl, then set aside 2tbsp for later.
Take a quarter of the fondant icing sugar from the bowl and mix with water to create a smooth, thick paste. Gradually add the rest of the sugar until the mixture has dough-like consistency and formed a ball shape.
Sprinkle the reserved icing sugar onto a surface and knead the icing until smooth.
You can then create beautiful edible decorations by hand or using cutters.
