Recipe suggestion
Beef massaman curry (serves 4)
- 1 jar morrisons massman curry paste
- 500g diced casserole beef (diced to approx. 2cm cubes)
- 400ml tin coconut milk
- 150ml beef stock
- 300g baby potatoes (cut in half)
- Salted peanuts (optional)

Method
1. Heat 1 tbsp of oil in a larger pan..
2. Add the massaman curry paste and fry for 1-2 minutes.
3. Add the beef and cook for a further 5 minutes.
4. Pour in the coconut milk and stock, stir well and bring to the boil. Then cover and simmer at a low heat for 1 hour. Stir occasionally.
5. Uncover, add potatoes and boil gently for 30 minutes until tender.
6. Stir in peanuts (as required) and serve with rice.
For a quicker meal, replace the casserole beef with diced frying steak and reduce simmer time to 20 minutes.
