Oven cook - From Chilled. These instructions are a guide only. Cooking appliances vary. When cooking to medium ensure the meat is fully sealed on all sides. Increase cooking time if you prefer well done. Cover joints with foil and rest for 15 minutes before serving. Pre-heat oven to 190°C/Fan 180°C/375°F/Gas Mark 5. Season the meat, place in a roasting tray and cook in the centre of the oven for Lamb Shoulder - Medium - 30 minutes per 500g plus 30 minutes. Well done - Extend cooking time until cooked to preference.
Just don't bother with this. There is hardly any meat on this joint. Despite following the instructions to the letter for roasting this there was not enough for the two of us. Shame because I love lamb. The flavour was there but just 70% bone. Are you squashing the farmers so tightly that the very small amount of meat for the price suffers? We will never buy again.
I've always bought the half shoulder blade end and it is always very good - I really like Morrisons lamb. They haven't had this for the last couple of times I've shopped so I had to buy this knuckle end. Will not be buying again.
Unlike some lamb shoulders I have had there was very little fat or bone and plenty of meat on this one. Sat it on top of potatoes, onions and stock and slow roasted for about 4 hours. Lovely tender meat and plenty of it. Bought as a flash sale but wouldn't have paid full price for a mid week meal
