Preparation and Usage

Remove from the fridge 20 minutes before cooking and remove from all packaging to allow meat to reach room temperature.
Ensure pan is hot by pre-heating over a high heat before adding a little oil, season meat and add to pan once oil is smoking, reduce heat to medium and cook for rare: fry for 2 minutes on each side. Medium: fry for 3 minutes on each side. Well done: fry for 4 minutes on each side or until cooked to preference. Ensure the meat is fully sealed on all sides.
Remove from heat, keep warm, cover and allow to rest for Rare: 3 minutes.
Medium: 4-5 minutes. Well done: 5-6 minutes before serving.

I just discovered these brilliant steaks
Tried these out and they were great. The cut was thick and marbled w8th fat but very lean. I cooked them in the air fryer and they came out perfectly. The thinner steak was medium rare and the thicker one was rare just as we like them. Now on my favourites list.

according to the name for this cut of meat it is supposed to be tender with no fat, no sinew, no gristle. the meat without the sinew and gristle was tender, however you can not chew or swallow sinew or gristle. it is obvious their butcher has no idea that this cut of meat needs to be pure meat only!!!

First time trying this cut, got to say its much better than what I was expecting.
Tasty treat
I bought this as a treat,added salt and pepper and small amount of butter in a frying pan and cooked for roughly four mins on both sides.Turned pan off covered and left to relax for 10 minutes,it was beautiful and full of flavour.I am purchasing it again now.
