When Benedictine monk Dom Perignon was making wine in 1693 and couldn't rid it of bubbles, he tasted his accidental creation and exclaimed, ¿Come quickly! I am drinking the stars!¿ This then was the birth of the drink we associate with celebration and luxury. In 1989, Didier Chopin began his Champagne business, giving his name to the first bottle made - Chopin. The family business is a little more than 3 hectares or 200,000 bottles are produced each year.

The Chopin Champagne house is situated in the village of Champlat-Boujacourt, in La Vallée de la Marne, 25 km from Epernay and Reims, 1 hour from Paris.

Vinification Details
"After the harvest, the grapes are vinified separately with the first fermentation made in vats. Malolactic fermentation. The cuvée is the blend of different wines from different grape varieties and different plots. The champagne is a blend of the black grape varieties Pinot Meunier (60%) and Pinot Noir 40%. The bottles remain on slats for a variable period of three years.

excellent and good value champagne

How did they do it at this price? This is far more sophisticated than one would expect from a champagne in this price range, and to be able to buy it for £10 is almost insane! Beautiful fruit and biscuity tastes in a not-too-fizzy champagne means you sip it it, rather than down it in one gulp. Not had a champagne as good as this for a number of years-get it while you can.
